Food Truck Highlight: Honeycuspe in Olympia, Washington

One of my all-time favorite brunch spots in our city is Honeycuspe, a delicious gourmet waffle food truck in downtown.

MADELINE - warm cookie butter, toasted pecans, caramel, and fresh whipped cream.

BREAKFAST - two strips of applewood smoked bacon (omitted above), two soft cooked eggs, melted cheddar, special smoked aioli, and chives.

In addition to these, I have also tried and enjoyed their Strawberry Compote flavor comprised of a strawberry-lemon compote topped with fresh whipped cream, in addition to the Dalmatian made with baked-in chocolate chips, fresh whipped cream, dark chocolate sauce and more chocolate chips added on top.
